Our cuisine is simple and composed by genuine dishes made at the moment. We respect traditions but we love innovation, we keep looking for the best ingredients from local productors and distant ones, in order to put quality before quantity.
We are proud of all our ingredients, from oil to anchoves, to flour and meat. Our duty will be to transfer to you the passion we put in what we do.
We propose not only classic starters, starting from anchoves "al verde", moving to quiches made with seasonal vegetables, landing on our incredible "taglieri di salumi", filled with local cheese and Granda cold cuts.
In out refuge you will be able to try the real polenta, made with integral Marano corn flour and Pignoletto Rosso mais, served in the traditional "fujot", and garnished with the best local cheese, with meat stew, sausages, culatello or wildlife meat. We always propose an alternative dish in case you don't like polenta. For a sweet ending, you'll be able to choose from our assortment of homemade cakes, cooked using top level "0" flour, fresh eggs and local mountain butter, filled with the best jams specially selected and bought from Sud-Tirol.
OUR PRODUCTS;
Our polenta is made with Pignoletto Rosso corn flour, which is an ancient corn variety, fragrant and tasty. This kind of corn was disappearing, until some corageous farmers decided to put it back on the market. It is created grinding the grains with stone and is sold by Molino Roccati.
Sometimes we also use polenta from Azienda Agricola Longo Mauro Antonio, they produce Marano integral corn flour, stone grinded, non-hybrid, non-transgenic, grown and produced on Monferrato hills with eco-friendly techniques.
Our cheese comes directly from Azienda Agricola Lussiana-Listello, during the summer they can be found in Sellery Inferiore mountain pasture, located on the trail that reaches our refuge. We also buy cheese from Azienda Agricola f.lli Lussiana and Azienda Agricola Lussiana Erminio.
Meat and cold cuts come from Salumifico Nigro and Macelleria f.lli Cavallo di Cuneo.
Bread comes from Cit Furn in Coazze.
